This is a mayonnaise free vegan coleslaw which is a great alternative to your normal coleslaw. It is light and refreshing.

½ head of white or green cabbage thinly sliced

½ head of purple cabbage thinly sliced

1 onion thinly sliced

3 grated carrots

1 cup of raisins or currants

Lemon zest of 1 lemon

Juice of 2 lemons

2 teaspoons love dust, Cajun seasoning

1 tsp Lemon pepper, optional

Large spoonful of sea salt

¼ cup of sugar

1 cup of olive oil

½ cup cider or white wine vinegar

Add walnuts or pecans if there are no nut allergies.( optional)

Mix all together. I find it best to use your hands. You will notice that it takes on a sheen, a glow, make sure you taste it and if it needs more seasoning add it, but remember that the salad needs to rest for at least a couple of hours where some of the water will come out and the flavours will build.
