VEGAN BUTTERNUT SQUASH AND SWEET POTATO CURRY RECIPE

Cut into even sized small cubes ( about 1 inch by 1 inch)

1 small peeled butternut squash and

4 Sweet potatoes

2 Carrots

3 parsnips

1 large diced Onions

1X Mixed peppers, green, red, yellow

3 cloves of garlic diced

Fresh ginger diced finely

Add

2 teaspoons Cumin seeds

1 teaspoon ground cumin

1 teaspoon black pepper

1 tsp Salt

Love dust, Cajun seasoning

1 tsp oregano or mixed herbs

Lemon pepper (optional)

1 tsp Chilli flakes

½ cup Curry powder

1 cup of olive oil

Mix all together with your hands, squeeze all the spices throughout. Place into a hot oven 350 degrees 200c and roast until the sweet potato and butternut squash are softened around 40 minutes.

Then add 1 tin of chick peas and butter beans and Large handful sliced Mushrooms

add 1 tin of coconut milk and fresh chopped up coriander

to finish off the dish. Cook for further 20 minutes
