400g self raising flour…can be gluten free
300g white sugar
100g coco powder
A pinch of salt
2-3 teaspoons baking powder
Mix all the dry ingredients together
Add 200 ml vegetable oil
2 teaspoons vanilla
1 teaspoon white vinegar ( this is the vegan replacement for the eggs)
Mix it all together. This can be done by hand, no need for an electric mixer.
I wanted to change the recipe a bit so I have added some fresh dates to the mixture. Remove the stones first and drop into the mix.
Add some flour to dust your cake pans and place the cake mixture into either 2 - 9inch cakes, a small sheet cake or 1 Bundt or tubular cake tin.
Bake in the oven for 30 minutes or until cooked in the center.
Top with a dusting of icing sugar or make up a vegan icing.
