For the marinade
150ml soy sauce 150ml cider vinegar or malt vinegar 1 tablespoon ground cinnamon 2 tablespoons dried mixed herbs 1 teaspoon ground black pepper 1 teaspoon salt 2 tablespoons Momma’s Cajun Seasoning (page 50) 1 tablespoon ground cumin 15g dried chilli flakes 300g soft dark brown sugar 150ml vegetable oil
Place all the marinade ingredients except the sugar and oil in a large pan and bring to the boil. Simmer for 5 minutes, then stir in the sugar. Simmer for 20 minutes, until the mixture has reduced to a fairly thick, dark syrup. Remove from the heat, whisk in the oil and leave to cool.
