Roasted Beetroot

Beetroots, peeled and quartered Scallions (spring onions), chopped Garlic Fresh Ginger, sliced Fresh Coriander (Cilantro) Momma’s Cajun Seasoning Flaked Sea Salt – generous amount Pepper


Chop your beets and scallions and add to a bowl with your garlic and sliced ginger. Add some Coriander, Cajun seasoning, salt, pepper, olive oil. Toss well. Place in a hot oven to roast for about half an hour. If you want to you can now add some crumbled Feta or Mozzarella for added flavour. When cooled, add to salads.
