Halloumi cheese Store bought or home made puff pastry. Split red lentils Stock cube Potatoes courgettes celery
Add to your pan of leftovers some halloumi, parboiled potatoes and courgettes (zucchini), mix it well and add to an oven proof dish. Add some cooked red lentils to thicken the mixture and some chopped celery. (If the mixture has become too spicy from marinading – you can add some cream) Top with rolled puff pastry, push down the edges to seal, but leave a little room to rise, brush with a beaten egg or melted butter (which I prefer), cut some air pockets and bake in a pre-heated oven at 200c for 30 mins until golden brown.
