Meatballs are quick and easy to make and are a great way of introducing children to cooking, since you can let them help shape the mixture. Serve with potatoes and other vegetables, or in a hotdog burger as a lunchtime snack.
1 onion, peeled 1 green pepper 1 mild chilli 800g minced beef 50g fresh coriander (leaves and stalks), chopped 2 tablespoons Momma’s Cajun Seasoning 1 teaspoon salt 1/2 teaspoon black pepper 1 tablespoon Worcestershire sauce 1 egg Barbecue sauce, gravy or tomato sauce, to serve
Cut the onion, green pepper and chilli into chunks, put them in a bowl and blend them together with a hand blender (if you don’t have a hand blender, just chop them finely). Add the mince, coriander, seasonings, Worcestershire sauce and egg and mix well with your hands. Shape the mixture into balls slightly smaller than a golf ball. Place on a baking tray and bake in an oven preheated to 180C/Gas Mark 4 for 20 minutes. Serve with Barbecue sauce, tomato sauce or gravy, plus potatoes and vegetables.
