CRAB CAKES with a Cajun Twist
Spring onion, chopped Coriander Juice of a lemon – seeds removed Juice of half a lime, egg hot sauce Worcestershire sauce mustard Mayonnaise Momma’s Cajun Seasoning Celery Salt Pepper Crab Claw 2/3 cup of breadcrumbs oil for frying
Whisk the egg with the spring onion and coriander and add the Worcestershire sauce, hot sauce, mustard and mayonnaise, mix well. Add the Celery salt & pepper
Add the crab claw to the beaten egg and seasonings and mix well. Then add the breadcrumbs and gently fold them in.
Make into patties and shallow fry until golden brown and cooked through.
