Corn Bread

Serves 6-8


225g butter 225g pain flour sifted 225g medium yellow cornmeal / polenta 1 tablespoon baking powder 1 teaspoon salt 125g caster sugar 2 large eggs 475ml milk


Set oven to 180 degrees C, Gas mark 4, put the butter in your baking tin, and place in the hot oven to melt, being careful not to burn it. Remove once melted.


Combine all the dry ingredients in a bowl and make a well in the center. Add the eggs, milk, and melted butter, and stir well with a wooden spoon, working fast so the butter doesn’t harden. Pour the mixture into the warm baking tin. Place in the oven and bake for 35- 40 minuets, until risen and golden brown. Serve when ready.
