Oil, for cooking Onion, chopped Spring Onions, chopped Ginger, peeled & chopped Garlic, peeled & chopped Chicken, you can use the leftovers from your roast, or whatever chicken you have available Celery Momma’s Cajun Seasoning Casserole mix (pre chopped veggies) Lemon, Salt
To a pan, add some olive oil and a chopped onion. Add spring onions, ginger, garlic, celery. Add your chicken, if it’s from a roast, throw the whole thing in, including the bones and any gravy etc. Season with Cajun seasoning, casserole mix. Add water to the roast chicken pan, stir it up and add it to the soup pot. Add more water if necessary, there should be enough to cover the veggies and meat. Squeeze your lemon into the pot, then drop the lemon in too. Add a bit of salt, then leave it to slow cook for approx 90 minutes.
