Chicken Nuggets

Quick & easy, can be made in bulk, frozen and used and when needed.

Chicken thighs or breasts, skinless & boneless Vreadcrumbs, fresh or bought Worcestershire sauce Dark Soy sauce Juice of a lemon Momma’s Cajun seasoning, to taste Vegetable stock cube 2 Eggs

Seasoned plain flour – cajun, all purpose seasoning, black pepper Breadcrumb seasoning – dried thyme, dried oregano, black pepper

Remove the fat from the meat, slice it into bite sized chunks and put in a bowl. Marinade the chicken in a mixture of Worcestershire sauce, dark soy sauce, juice of half a lemon, cajun seasoning & black pepper. Mix well and add a stock cube. Leave to one side.

Season your flour and breadcrumbs. Whisk two eggs.

Place your seasoned flour into a plastic food bag, add some chicken, and shake until coated. Dip the coated chicken in the egg, then roll in breadcrumbs and place on a greased baking tray. Sprinkle the other half of the lemon juice over the nuggets and drizzle with a bit of oil.

Bake in the middle of a hot oven for approximately 25 minutes turning half way through if not fan assisted.
